Mile High Lemon Meringue Pie on Belated Canadian Thanksgiving Day

For as far as I can remember, I’ve always had a thing for Lemon Meringue Pies. It’s one of those pies you love to eat, but never make. Also I find it’s one of those desserts that’s either super delicious, or just plain awful. I’ve had my share of both.

Ironically enough this day started as having a belated Canadian Thanksgiving in Egypt. Talk about how socially and culturally mixed my family is. But thats a whole other topic on its own. But never the less that’s what makes us fun and entertaining I guess. So what best to go with the big old turkey feast? Good old fashioned Pumpkin Pie.

But unfortunately we had an issue finding And all of the sudden we were dessert-less. So what Apple Pie? Pecan Pie? After not being able to come an agreement with my sister, we finally agreed on Lemon Meringue Pie. I did not realize that 45 minute later I’d be kicking my self for even suggesting it.

I’ve seriously baked almost every dessert you can think of. At least once. No joke. Except Lemon Meringue. Not sure why, but well when I pulled out all my notes for the luscious dessert I remembered why I left it as the one dessert always enjoyed more when someone else made it.

39 steps later and an hour and half from when I started the damn pie was in the oven. And looking glorious I must admit, and only then did I vow never to make it again.

Later that night when I tasted the pie, I decided that I think I’d have to make it again 🙂
I enjoyed it for three consecutive meals after that as well.

  1. this looks awesome! I made a chocolate meringue pie once, but I haven’t tried the lemon one.

    1. It’s one of my favorites! It’s really a perfect pie, I need to post the recipe I just realized I didn’t 🙂 just needs a full afternoon or morning to make it!
